About the winemaker

"Our winery is right on the river Serein, the lifeline of Chablis. Some of our 100-year-old vines (vieilles vignes in French) were planted by my grandfather when he was young. It has been like this for 13 generations since 1590. That makes us one of the oldest wine families in Chablis."

On the palate, it's medium to full-bodied, ample and concentrated, with good depth and dimension, tangy balancing acids and a long finish (2017 vintage).”

Chablis, 180 kilometres south-east of Paris, is one of France's best-known wine regions. The 'satellite state of Burgundy' belongs to Burgundy but still occupies a separate place there. Because Chablis is really a bit further north, it has a completely different style from its oak aged, full-bodied chardonnay neighbours. The climate here is on average a few degrees cooler than in Burgundy and the chardonnay grapes are grown on so-called 'Kimmeridge' soil. Millions of years ago, a raging inland sea churned there which, when it disappeared, left billions of fish, squid and shellfish in the soil. The roots of Jean-Francois Bordet's very best Premier Cru chardonnay vintages absorb huge amounts of the calcareous minerals from the soil. This layer gives Chablis its specific mineral aromas and also its nickname; oyster water.
