Weinviertel, Austria
Wine has been produced in the Austrian wine region of Kamptal for centuries. This isn't surprising, as the valley lies to the west and east of the Kamp River and offers ideal conditions for growing grapes. The Grüner Veltliner is the most widely grown grape here. It's rarely found outside Austria, only occasionally in the Czech Republic and Hungary. It's no wonder winemaker Andreas chose local pride as the basis for his alcohol-free drink. For his grape kombucha, Andreas uses freshly squeezed grape juice and a "Scoby." This is a vibrant culture of bacteria and yeasts that converts sugar into mild acidity and a subtle, sparkling fizz. He then infuses this with lemon balm and elderflower for added spice and fresh acidity. A splash of his own alcohol-free wine makes it a real treat!
