About the winemaker

“In 2003, we started making typical Cape wines. Our philosophy is to showcase the complexity and typicity of the grape variety and our unique terroir. Origin and 'the feeling' are of utmost importance. I have completely immersed myself in two grape varieties: Viognier and Syrah. Both are originally from the Rhône Valley but exceptionally suited for the Atlantic climate here on the Cape.”

De naam “The Dalmation” verklapt eigenlijk al dat er Viognier in de blend wordt gebruikt. Behalve het zwart/wit (rode en witte wijn) van de Dalmatiër, komt Viognier van origine namelijk uit Dalmatia, een regio in Kroatië. De Romeinse keizer Probus was zo’n fan van de druif dat hij hem introduceerde in andere regio’s. De waarheid van deze legende wordt overigens betwijfeld. Het gebruik van Viognier in een rode blend met Syrah, komt van origine uit het noordelijke deel van de Rhône vallei, in Côte-Rôtie om precies te zijn. Hier groeide de Viognier en Syrah naast elkaar in de wijngaarden. Toen in 1965 de totale oppervlakte van Viognier wereldwijd nog maar 8 hectare bedroeg werden deze druiven bij de rode wijnen geblend. Dit resulteerde in aromatischere, frisse wijnen.

Stellenbosch is also known as the 'oak town.' This is because in the past, a large number of oak trees were planted to make wine barrels. Due to the warm climate, oak trees grow very fast here, resulting in large grain in the oak wood. As a result, they are less suitable for aging wine, as the grain allows too much oxygen in, causing wines to oxidize more quickly. That's why many South African winemakers prefer to use European oak, and many South African oak trees remain standing.In 2003, we started making truly Cape wines here.
