About the winemaker

“I am originally French, but I have been living in Hungary for over twenty years now and have fallen in love with the rich history and indigenous grape varieties of this country. I think the vineyards here in Tokaj are at their best early in the day, when the early morning fog is just lifting. For this late harvest we let the grapes hang as long as possible. We start picking at the end of October and always select only the bunches that are perfectly ripe, which continues until the end of November. A time consuming process but at the end, worth it!”

The Hungarian wine world ended up in the doldrums due to the communist regime. Wineries became state-owned and production focused on quantity rather than quality. After independence in 1990, many foreign winemakers moved to the country, who, with their knowledge of modern techniques, ensured a quality leap. The grapes for this wine are harvested late, which is possible thanks to the long, sunny and dry late summers in Tokaj. The fruit then becomes very concentrated and rich in sugars. Thanks to the good acidity of hárslevelű, in addition to refined aromas of elderflower and passion fruit, this wine also has a playful acidity that goes very well with fruity desserts.
