About the winemaker

“Cava is the Spanish answer to champagne. It is made according to exactly the same process, namely with a second fermentation in the bottle. What not many people know is that cava is derived from the Spanish word for underground cellar. The cavas have to spend at least 9 months there.”

"Flûte in de hand. Pink omhoog: hier is de Pink Pink Fizz. Goed geslaagde en fijn gelaagde Cava rosé van de trepatdruif. Mooi droog, zuiver rood zomerfruit. Mooie frisse afdronk. Opnieuw geproefd. Naast de pink gaat ook de duim omhoog.”

Penedès is the large wine region southwest of the Catalan capital of Barcelona. This is where about 85% of all Spanish cavas come from. To make white cava, the juice of three native grapes is usually used: macabeo, xarel-lo and pearlada. These are relatively well known names when you compare them to the variety used for this rosé cava; the trepat. This is a blue grape with a thick skin and compact fruits that are usually harvested late. Although still wines are also made from it, the Trepat is mainly found in pink cavas, sometimes blended. It is responsible for aromas of red fruit such as strawberries and raspberries
