About the winemaker

"Together with my wife Emelie, I recently took over Château Saint-Jean d'Aumières, in the southern French Herault . Our dream was finally coming true. The vineyards, not far from Montpellier, lie on a soil of chalk where the roots are rooted deep in the limestone rocks and where fresh influences from the Mediterranean are noticeable. My chardonnay therefore clearly shows its provenance; it possesses a chalky minerality and elegant peach fruit with fresh citrus notes."

Proefnotitie
"Does the C stand for chenin blanc, cabernet franc or colombard? In this case, it is a tribute to the world's most elegant grape; chardonnay. In this case with a capital letter; Chardonnay!"

Pays d’oc, France
The southern French Pays d'Oc - which covers the whole of Languedoc-Roussillon - is a patchwork of different appellations, countless wine châteaux and as many as 30 different authorised grape varieties. Chardonnay is a grape that does well in the Pays d'Oc. This grape has become world-famous in Burgundy, but its adaptability in terms of soil and climate allows it to reach great heights in many different areas. Chardonnay ripens early in the season and is quite resistant to heat and cold. Wine from chardonnay grapes lends itself perfectly to oak aging, which gives the wine more power and allows it to develop aromas of vanilla and coconut. This chardonnay has received a short wood maturation which gives it just that little extra volume and complexity.
