About the winemaker

"I started my wine career as an 'élevuer en vins'. That is the person who deals with the process in the wine cellar from fermentation to bottling the wine. I was basically the companion of the wines from their youth up till their maturity. I decided to start for myself and put my expertise into my wines. Cave Alignan soon became a reality and since then I have focused entirely on the success as well as the upbringing of my own wines."

"Everyone always wonders how to pronounce the name of this wine. Is it 'I Care' (in English) or icare in French. We asked winemaker Alexander, and he told us that the wine is named after Icarus from Greek mytholigy, who flew with his father towards the sun and then crashed down. The French prefer to stick to the French name of Icarus, namely Icare (phonetically: iekare)."

Côtes de thongue, France
In the heart of France's Languedoc-Rousillon you will find the Côtes de Thongue wine region, named after the river that meanders between the vineyards. Along the coastal strip, you mostly encounter warm-weather grapes like grenache and syrah, but as the landscape inland moves up into the mountains, you'll run into 'good old' chardonnay. The grapes are pressed immediately on arrival in the cellar. As an extra boost, the wine matures on its own yeast sediment, then rests for almost a year in barrels of new French oak. It explains the wine's full, creamy flavour, which remains elegant and drinkable despite the explosion of exotic fruit and wood.
