Pinot noir
Dat er ook in het meest noordelijke deel van de Bourgogne fantastische pinot noir gemaakt kan worden bewijst wijnboer Xavier. Zijn pinot noir is niet alleen fris maar ook super verleidelijk vol frambozen, rozen en peper.

About the winemaker

“Most people know Cote d'Or as a part of Burgundy full of famous appellations, where mainly Pinot Noir is planted. But besides that, it is also a historic vineyard in Auxerre, near my birthplace. When I had the opportunity to get a piece of this, I didn't have to think long and replanted the vineyards with my entire family.”

Although Chablis has the status as king of at least the northern part of Burgundy, Auxerre is one of the few parts still undiscovered. This has everything to do with the phylloxera pandemic. Long before Chablis became famous as a top area, the wines of the neighboring village of Auxerre were already extremely popular with the Parisian population. In fact, Auxerre almost had a monopoly on quality wine in the French capital. With access to that very thirsty population, a large wine-growing area developed around the city in the 12th and 13th centuries. This popularity was brutally disrupted by the phylloxera pandemic. Many farmers then opted for security and planted cherry trees instead of new grape vines. After all, the price per kilo was virtually the same at the time. There is now a new generation of winegrowers who are rediscovering the region. This not only produces exciting wines, but also Burgundies that excel in their price/quality ratio.
