“I began my winemaking career as an ‘éleveur en vins’—the person in the cellar responsible for guiding the wine from fermentation to bottling. I was essentially the caretaker of the wines, guiding them from their youth to full maturity. I decided to start my own venture and apply my expertise to my own wines. In the heart of the region, just north of the medieval town of Pézenas, lies the Côtes de Thongue wine area, named after the river that winds through the vineyards. Along the coastal strip, a Mediterranean climate prevails, supporting grapes that thrive in the heat, such as Grenache and Syrah. As the landscape becomes more mountainous inland, temperatures drop, allowing for white grape varieties like Sauvignon Blanc to be planted on the cooler slopes.
