“I know, moldy grapes. That doesn't sound very good. The opposite is true. In the Monbazillac, the conditions are ideal for picking my grapes later in the harvest season. The fungus botrytis then actually makes very small holes in the grapes, causing them to dry out into currants. If you press these grapes, you get a kind of concentrated nectar from the gods. Indispensable with desserts, pies or cheese boards with a lot of blue cheese.''

Monbazillac's nickname is also known as 'the poor man Sauternes'. Sauternes has a somewhat more prestigious name, because this region is located in the mythical Bordeaux. Just a few kilometers to the east is Monbazillac, just outside Bordeaux. Same grapes, same mould, same process and taste, but a bit cheaper!

Bergerac, France
Monbazillac is the region for sweet wines from Bergerac. Monbazillac is made exactly according to the same method and from the same as Sauternes (sauvignon blanc, sémillon and muscadelle), which is located a bit more north-west in Bordeaux. The grapes are picked later and affected by noble rot. In short, the skin of the grapes is affected by a fungus (botrytis cinerea), causing the grape to lose a lot of moisture and the sugars and acids to gain concentration. Wine is made from the shriveled grapes. Honey, apricots and other tropical fruits characterize this style of finely sweet white wines that pair particularly well with foie gras and blue cheese.
