About the winemaker

"Domaine Giroux has been owned by our family for almost three centuries. In 2009, I succeeded my father and took over the management of our domain. From then on, I made a number of changes: we now work completely organically and with as few additives to the wine as possible. We also harvest by hand. But not everything has been renewed: the oldest grapes for our Pouilly-Fuissé Vieilles Vignes come from vines up to 80 years old, so they last for generations."

This Chardonnay from Sébastien Giroux comes from one of Burgundy's best and most mythical regions: Pouilly-Fuissé. It is the combination of Sébastiens' 80-year-old chardonnay vines (Vieilles Vignes therefore means 'old vines'), the soil of chalk and clay and the 11 months of wood maturation that make this organic white Burgundy with enormous concentration, minerality and complex aromas possible. This is the pièce de résistance at your dinner table that pairs wonderfully with oysters, fattier fish, as well as light meat dishes.

Houtgelagerd? Zeker. Boterig? Nou, nee. Eerder hazelnoot en oester: dus kruidig en mineralig. Ideaal voor bij zalm met paddestoelen roomsaus. Lijkt me ook lekker bij kip, trouwens.
