There is another sweet PX, the NV Pedro Ximénez Tauromaquia, in this case aged in a solera for no less than six years before bottling. Somehow the alcohol was a little noticeable in the nose, even though the aromas of raisins, dried figs, plums and dates are very strong. It's bottled with a little more than 400 grams of sugar and lowish acidity, which makes it very dense, sweet and powerful. 6,000 bottles per year.

In the southern part of the province of Córdoba is the D.O. Montilla Moriles. The desert-like climate in Montilla-Moriles is continental, with the heat being the main challenge for the winegrower. Fortunately, that climate also has advantages: pests and diseases are rare. The grape used here for the fortified wine is the Pedro Ximénes. This is ideally suited for drying the grapes in the sun before vinification, as has also happened here. It gives the wine a syrupy structure and aromas of raisins and nuts.
