About the winemaker

 “My father taught me that when making wine you have to rely on your senses and on nature. That is why I harvest and select the grapes by hand. As one of the few winemakers in Castilla la Mancha, I also work organically. I am the fourth generation winemaker in our family and hope to pass on the knowledge and skills we have acquired to my son.”

De bubbels van cava ontstaan door een tweede vergisting op fles, bij een frizzante vindt deze tweede vergisting plaats op een tank. Eigenlijk op dezelfde manier als een prosecco. Mag je deze bubbel dan een Spaanse prosecco noemen? Van ons wel!

Tierra de castilla, Spain
Castilla-la Mancha is a region in southeastern Spain. It can get very hot here, but it cools down again at night so that the grapes can ripen evenly. The wine consists of 80% airén and 20% sauvignon blanc. Airén is the most widely planted white grape La Mancha. With its thick skin, it can withstand extreme temperatures and retains fresh acidity despite the heat. The grapes are fermented using the Charmat method, with the second fermentation of the wine taking place in the barrel. This makes the mousse less pronounced than when the second fermentation follows in the bottle and the wine is pleasantly soft.
