About the winemaker

"I only use natural pesticides, select indigenous yeast cells for fermentation, plow the old-fashioned way with horses and reduce the use of sulfites - where possible, the use of sulfites is avoided altogether. I make several natural cuvées from six different terroirs - This assembly of meunier, pinot noir and chardonnay is one of them. This champagne matures for 4 years in our cellar dug out of chalk and receives a minimum dose (2 g / l)."

Charles Bérnard's champagne house is located a little north in the champagne region. The grapes come from the Premier Cru vineyards of the village of Mareuil-sur-Aÿ. Chemindu Bois, LaMaladrille, Les BassesClefsen Les Sept Arpen to be precise. This champagne is an assembly of 66% meunier, 17% pinot noir and 17% chardonnay. The meunier is resistant to spring frosts and ripens just a little earlier than the pinot noir and de chardonnay, and provides this champagne with freshness and the exciting floral aromas. The pinot noir part provides the fruity, somewhat firmer tones and the chardonnay gives layering due to its exciting acidity and light-footed refinement.
